But first, you need to find its spawn location, then manage your hardest to make it stay in one place so you can capture it.

How to Find the Honey Bumblephant

The Honey Bumblephant is the newly included flying mount that is found in My Sweet Gluttony. If you check the mount codex and search for the capture location of the Honey Bumblephant, the spawn location for it will show up northeast of the Rockspire area. But if you get here, you won’t find anything that will trigger the mount spawn.

The actual location is a bit further southeast of where the spawn location was marked. Just a bit further away, you should spot a contraption that resembles a beehive. At first, nothing’s going to happen if you interact with it. Rather, I suggest changing the time to 12 PM, then interacting with the beehive.
You will find a scent trail that leads away from the beehive to a different location. The locations won’t be the same per playthrough, so you need to follow the trail wherever it leads. This will take you to a large flower surrounded by bees. Defeat the giant bees, then hit the flower a couple of times to summon the Honey Bumblephant.
How to Capture the Honey Bumblephant

Capturing the Honey Bumblephant is similar to every other mount in the game. You need to defeat it, then use the Radiant Potions of Charm to increase your capture rate. The reason why I suggest using the Radiant Potions of Charm is that the Honey Bumblephant has a 70% resistance rate. With that particular potion, your chances of capturing it are 15%, which is an almost +80% success rate.
The Honey Bumbephant has just one basic attack, where it will fly up and slam down. But mostly, the mount will try to run away by flopping out of your radius. You need to be quick and land several hits before it can escape. I went with Diane for the fight, but you can pick any DPS character you wish.

Before using your charm potion, I would recommend stunning the creature in place, since the Honey Bumblephant is extremely mobile and evasive. Stun the mount, then use the potion before it gets a chance to unfreeze itself. If you can’t seem to capture it, reduce its HP a bit more, then go with the potion again. In case you kill it, you can always interact with the beehive again to get the trail to the flower and respawn the mount.
